For the last year, I’ve been able to tell people that my friends and I bought a cow. Of course, this was no pet – our cow was destined for the dinner plate. I got regular updates and photos of his life on a ranch in North Dakota, where he was able to hang out with the rest of the herd, eat grass, and live what looked like a fairly decent life.

I signed up for about 100 pounds from the total take, which seems just about the limit of a standard freezer. In addition to that 100 pounds, though, I was able to take home some of the bits nobody else really wanted as a “bonus.” So I’m going to have to figure out the best way to cook some of these cuts (particularly organ meats) I’ve never cooked before.
I take some comfort in the way this animal was treated before he was slaughtered, and am also pretty stoked on the health benefits of buying meat this way. Looking forward to experimenting with cooking – and eating – this food in 2012!
